Mr Bing's mission is to introduce America to traditional Northern Chinese street crepes ('jianbing', 煎饼). For those already familiar with 'jianbing,' the aim is to instill a vibrant sense of nostalgia for the China street culture they remember. The founder, Brian Goldberg, was inspired to bring this beloved street food back to America after studying Chinese in Beijing in 1998 and falling in love with the bings made fresh on the back of a bicycle cart. The legend of 'jianbing' dates back nearly 2,000 years, adding to the rich history and tradition behind this authentic Beijing street crepe.
