    Hideto Kawahara, founder of "Hide-Chan Ramen" in Japan, followed in his father's footsteps to open his own ramen house in Hakata, the original HIDE-CHAN RAMEN. His Tonkotsu Ramen, a rich creamy pork bone soup with thin long noodles, has made him a pioneer in the ramen world while holding on to traditional and authentic recipes. The first HIDE-CHAN RAMEN outside of Hakata opened in Akasaka, Tokyo in 2002, with 13 more stores throughout Japan. The Hell's Kitchen location in New York City, opened in 2017, has gained popularity among New Yorkers and tourists for its Japanese ramen, slow-cooked pork and vegetarian broths, dumplings, and drinks.
