Colony Grill, originally opened in 1935, has become famous for its unique thin-crust pizza, best served with the signature "hot oil" topping. The original owners, Irish-Americans, employed Italian and Eastern European chefs who created the "bar pie" - a smaller, thin-crust pizza that became a local favorite. The hot oil bar pie has become so popular that it is now the only menu offering at Colony Grill. The restaurant has received numerous accolades and has four locations in Connecticut. Co-owned and operated by Chris Drury, Paul Coniglio, Cody Lee, and Ken Martin, Colony Grill is open seven days a week, serving pizza and drinks from 11:30am until late closing.
